Lunch recipe for Kids - Paneer Bhurji with Roti and Mixed Vegetable Raita


Paneer Bhurji is a popular Indian dish made with crumbled paneer, tomatoes, onions, and spices. Paired with soft and fresh roti and a cooling mixed vegetable raita, this dish makes for a filling and balanced lunch for kids.

Ingredients:

For Paneer Bhurji:
  • 200g paneer, crumbled
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1 onion, chopped
  • 1 tomato, chopped
  • 1 green chilli, chopped
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1/2 tsp garam masala powder
  • Salt to taste
  • Coriander leaves for garnish
For Roti:
  • 2 cups whole wheat flour
  • 1 tsp salt
  • Water as needed
For Mixed Vegetable Raita:
  • 1 cup plain yogurt
  • 1 small cucumber, chopped
  • 1 small carrot, grated
  • 1 small tomato, chopped
  • 1/2 tsp cumin powder
  • Salt to taste
  • Coriander leaves for garnish
Instructions:

For Paneer Bhurji:
  1. Heat oil in a pan and add cumin seeds.
  2. Add onions and green chilli and sauté until onions turn translucent.
  3. Add tomatoes and cook until they become soft.
  4. Add turmeric powder, red chilli powder, garam masala powder, and salt. Mix well.
  5. Add crumbled paneer and mix gently until the paneer is coated with the spices.
  6. Cook for a few minutes until the paneer is heated through.
  7. Garnish with coriander leaves.
For Roti:
  1. In a mixing bowl, combine flour and salt.
  2. Add water and knead until a smooth dough is formed.
  3. Divide the dough into equal portions and roll out into thin circles.
  4. Heat a tawa or griddle over medium heat and cook the rotis on both sides until they puff up and have golden brown spots.
For Mixed Vegetable Raita:
  1. In a mixing bowl, whisk yogurt until smooth.
  2. Add chopped cucumber, grated carrot, chopped tomato, cumin powder, and salt. Mix well.
  3. Garnish with coriander leaves.
  4. Serve the Paneer Bhurji with fresh Roti and Mixed Vegetable Raita for a delicious and nutritious lunch for kids.

Notes:
  • You can add other vegetables such as capsicum or peas to the Paneer Bhurji for added nutrition.
  • Leftover Paneer Bhurji can be used as a filling for sandwiches or wraps.
  • The Mixed Vegetable Raita can be made with any vegetables of your choice, such as onion or beetroot.
